With this article we begin a series of articles about the Ayurvedic cuisine. Lassi – Indian is a refreshing beverage, a classical variant prepared by whipping yoghurt, water, spices, fruit and ice. This drink not only quenches thirst but also hunger, and helps digestion.

To begin to prepare yogurt, or, in extreme cases, to buy the finished product in the store.
In order to make your yogurt, it will take a liter of milk purchased (it is desirable to use a seven-day milk), and a jar
(0,125-0,2 L) live yoghurt (eg Valio, «with the bacteria”). Boil the milk in the pan, cover with gauze or sieve, and let cool to a little more room temperature. Add the milk yogurt from a jar and mix thoroughly clean spoon. Now we have to close the pan with a lid and put in a warm place, such as on a sunny windowsill, or use yogurt.

Ready to whisk the yogurt in a blender.
After whipping must give the resulting mass to settle to dissolve the oil particles formed in the upper layers. You can then top up with water to obtain the right consistency – drinking yoghurt. In very hot weather, you can add natural rose water to produce a greater cooling effect on the body. Then add the honey, fructose or sugar to taste. Very useful to add powdered saffron lassi, as it cleanses the blood and increases immunity. Good lassi add a pinch of cumin powder or cinnamon, both cools. Naturally, Lassi can add fresh fruit, berries, herbs:. E.g., mint, arugula, tarragon, etc. However, it should be added bananas, because they are not combined with dairy products.
